These cookies are amazing, because they are guilt free, healthy, delicious, filling and taste a little like shortbread ;-) You can use these to curb your appetite. So, they are great for weight loss. Read more about the amazing fat burning ability of coconut oil.  They contain only three basic ingredients: Coconut flour, coconut oil and honey.

Plain Coconut Cookie Recipe

Ingredients

  • 6 tbsp coconut flour
  • 4tbsp coconut oil melted
  • 2tbsp honey


Coconut cookies recipe method

  • Preheat the oven to 160 degrees Celsius. 
  • Mix your ingredients together. Consistency of dough shown in picture.

  • Place dough balls on a lined baking sheet.
  • Press down with a fork to flatten.

  • Put in oven for 8 minutes or until light brown.
  • Cool before moving, or they might break.
  • If you find that they are still a little chewy in the middle, you can leave put them in the oven for an additional 8 minutes on 60 degrees celsius.


For a coconut pecan cookies variation, you can add 2 tbsp of crushed pecan nuts.

Coconut Oil Chocolate Chip Cookies

Chocolate coconut cookies ingredients

  • 6 tbsp coconut flour
  • 2tbsp raw cocoa nibs (My cocoa nibs were mixed with a few flaxseed and sunflower seeds)
  • 1 tbsp raw cocoa powder (if you want them darker you can add more) 
  • 4tbsp coconut oil melted
  • 2tbsp honey
  • 1/4 tsp vanilla essence 

Chocolate coconut cookie method

  • Preheat the oven to 160 degrees Celsius.

Chewy Coconut Cookies
Made with Milled Sunflower Seeds

These chewy coconut cookies are great with our homemade coconut ice cream. I break them up into pieces and serve them mixed into the ice cream. The kids love this and its so healthy!

Ingredients

  • 1/4 cup Organic Coconut Oil
  • 1/3 cup Coconut Sugar or Xylitol
  • 2tsp organic honey
  • 1/4tsp Xanthan gum
  • 1/4 cup of milled sunflower seeds
  • 6 tbsp organic desiccated coconut
  • 1/2 tsp vanilla extract 

Method

  • Line your baking sheet with parchment paper.
  • On a medium heat, melt the Coconut sugar/Xylitol, coconut oil, honey. 
  • Remove from the heat, sprinkle with the Xanthum gum and mix well.
  • Stir in the milled sunflower seeds, desiccated coconut and vanilla. 
  • Make round balls with the mix and push them down with your fingers until flat.
  • Bake at 180 degrees C (350 degrees F) for 8 to 10 minutes.
  • These cookies need to cool down before you move them.
  • Once left in the fridge they become a little stiffer. Do not expect a crunchy or hard cookie.
