Homemade toasted coconut can never be compared with the bought stuff, they are worlds apart. Toasted coconut chips made at home are crispy and more flavorsome.

Good thing toasting coconut is so easy!

The rich, caramel, nutty flavor of toasted coconut goes great with almost all desserts and many savory dishes too. The combination of roasted coconut, banana and a good chicken curry are to die for!!

Switching from raw to toasted coconut in recipes will boost the coconutty flavor!

Toasted coconut is also great as an in between snack. They are healthy and even good for weight loss.


How Do You Toast Coconut?

You can roast your coconut in the oven or toast it in a pan on the stove, but I prefer to toast mine in a pan. The coconut is more evenly browned this way. You can use a variety of coconut cuts to roast/toast, namely: shredded, flaked or shaved.

When toasting / roasting coconut

  • Shave or shred your coconut as desired.
  • Place them in a packet with your favorite spices (if you want it spicy) Cinnamon works really well. You can add some Himalayan salt if you want them salty. If you want them sweet add a tsp or two of coconut sugar to the mix. Shake it up, until the coconut flakes/shavings are covered evenly.
  • If toasting on the stove top, toss in the pan and cook dry on medium heat, stir continuously until golden brown. Leave on an open surface to cool.
  • If roasting the coconut in the oven, preheat the oven to 320°F. Spread the prepared coconut on the baking sheet. Roast for 5 to 10 minutes

Crispy Coconut French Toast

My kids love this french toast!
  • 3 eggs
  • ¾ cup coconut milk
  • ⅛ tsp himalayan salt
  • 6 slices of bread
  • Coconut oil for frying
  • 1 cup Desiccated coconut (optional) You can dip the bread in desiccated coconut before frying - this ads extra crispiness.

Mix the salt, coconut milk and eggs together. Heat your coconut oil in the pan on medium heat. Dip the bread in the egg mix. Cook each side until golden brown.

Serve with honey and a blob of cream cheese. ;-) Or any other topping that tickles your fancy.
