This strawberry coconut jam recipe is wholly natural and sugar-free (contains natural sweetener - Xylitol). It is absolutely delicious!
I love to eat this on raw seed toast with chocolate almond/macadamia nut butter. My 9-year-old says this jam tastes better than any other jam. I'm happy about this since it contains no refined sugar!
I got the idea for this recipe while making a banting cheesecake. The cheesecake called for a strawberry topping. After making the cheesecake topping, I decided that I would turn it into a jam. So I modified the recipe and voila!

Add all these ingredients to a pan, bring to a boil, mash the strawberries as you cook them. Once strawberries are mashed, you can remove from the heat. Put your jam in a sealable container. Once it has cooled down, it will thicken completely.
