Coconut Milk Smoothie

When the summer finally arrives, much to my delight, it also brings with it the unexpected heat waves accompanied by warm gushes of wind and a depressing humidity. However much you may love spending time outside in the hottest of weather, it is vital that you take dehydration into account. While water is essential, a delicious coconut milk smoothie can also provide some of what your body requires to stay hydrated.

I’ve put together a list of ingredients for you today to help you prepare a healthy, creamy coconut smoothie that will quench your thirst on the hot summer days to follow. This smoothie will not only serve as a tasty way to hydrate but will also provide properties that repair and protect sun damaged skin.

For this recipe there is a variety of fresh fruit you can use to spruce it up; I have opted to go with pineapple to celebrate a beautiful summer day with my friends and family.

This recipe below makes two large pineapple coconut smoothies. Remember: you can double up, or triple up on the ingredients to accommodate more guests. I use an electric blender to prepare this smoothie recipe. 


Pineapple Coconut Milk Smoothie

Ingredients:

  • ½ a large pineapple
  • 1 Yellow apple
  • 2 Cans of Coconut Milk (500ml Approx.)
  • 1 Tbsp. of Coconut cream
  • 2 Tbsp. of Coconut shavings
  • ½  Cup of Cold water (125ml)


Instructions:

  • In an ice cube container prepare the coconut milk ice cubes. (Pour 1 can of the coconut milk into the mold and put away in the freezer overnight)
  • Peel all the fruit. (keeping the lemon peels)
  • Grate the lemon peels and set aside.
  • Chop the fruit into quarters (remove and discard pips)
  • In your electric blender, blend the apple and pineapple.
  • Add the coconut cream and shavings (Setting on low)
  • Add the cup of coconut milk and cold water and mix for 5 minutes on medium.
  • Crush the coconut ice cubes.
  • Pour the coconut milk smoothie into a large glass (filling to 1/2)
  • Add a hand full of crushed coconut milk ice cubes.
  • Mix well with a straw or spoon.
  • Serve with a slice of lemon.
  • For a cocktail version, just add a double shot of Vodka when pouring in the cold water. Blend on high for 2 minutes after following the steps through to 13 and serve.

Prepare the night before and pour into a large freezer friendly container. On a hot day, the frozen smoothie mixture will quickly melt into a slush puppy consistency during the morning. Shake thoroughly and pour into plastic cups or glasses and enjoy.

You can opt for strawberries, cranberries and a red apple for a red theme, and use grapes, cucumber and green apples for a green theme. Have fun making this deliciously soothing, and refreshing smoothie!
