Mayonnaise was always a childhood favorite, but as I got older and more health conscious, I decided to give it a skip.
How happy I was to discover later that there was a healthier alternative! Not only is this coconut oil mayonnaise healthy, but it is rich, creamy and does not disappoint!
You can use a blender or a hand whisk. Blend together your egg, egg yolk, mustard and lemon juice. Slowly incorporate your oil while mixing. Season and mix. Refrigerate.
Your coconut oil mayonnaise will be good for a week.
This mayo is not the consistency of regular mayo, it needs to stand out of the fridge for a few minutes before using unless you added the "optional" olive oil, in which case it will be the perfect consistency straight out the fridge.
