Coconut Popsicles

These delicious “ice creams” are so refreshing and cooling, you’d almost be fooled into thinking they were unhealthy.  But climbing onto the coconut bandwagon, these popsicles are packed full of all the goodness that coconut can offer!  Plus – kids love them!!

Coconut Milk Popsicles Recipe

Coconut Milk Popsicle

You will need:

  • Half a can of coconut milk
  • 1 and a half tablespoons of maple syrup
  • A dash of vanilla extract
  • 1 or 2 teaspoons of shredded coconut
  • 1 tablespoon of gelatine
  • 1 drop any color food coloring. (Optional)


  1. Mix everything and pour into your ice cream/popsicle molds.
  2. Pop them into the freezer for about 5 hours or until frozen solid.

These popsicles are very easy to experiment with.  Why don’t you try adding lime zest and juice to some, for an added sour kick! Or try this omega-rich avocado one recipe below! Avocado pear makes these popsicles incredibly smooth and creamy.

Avocado Coconut Cream Popsicles

Omega rich coconut and avo popsicle:

You will need:

  • 1 ready- to- use, soft avo
  • Half a can of coconut cream
  • 1 or 2 tablespoons of honey, agave or maple syrup

If you want to be very exotic, add this chocolate topping!

  • 120g dark chocolate preferably at least 70% cocoa
  • 60ml coconut oil


  1. Blend the avo, coconut milk and honey until nice and smooth.  
  2. Pour this into your popsicle molds.
  3. Place them in the freezer for about 5 hours.
  4. When you are ready to serve your popsicles, quickly melt the chocolate in a double boiler and stir in the coconut oil.
  5. Take the frozen popsicles out the freezer and pop them out of their molds.
  6. Dip them straight into the melted chocolate.
  7. Hand them immediately to an eagerly awaiting child.
  8. Enjoy!

Fruity Coconut Water Popsicles

Fruity coconut milk version of this recipe

You will need: 

  • Chopped up Fruit of choice. I love to use a mixture of different berries.
  • Coconut water (or coconut milk, if you prefer a creamier popsicle)


  1. Fill the molds 2/4 way full of fruit.
  2. Fill ¼ with orange juice.
  3. Fill the mold with coconut water.
  4. Place molds in freezer. Allow to freeze for 8 hours.

Variation to this recipe would be to replace the coconut water with coconut milk, for a creamier popsicle as seen in the picture.
