Most of us love to have something sweet every now and then, but nearly all desserts are filled with empty calories, including artificial ingredients and refined sugar, making them bad for your health and/or your figure. But, what if you could have a dessert that tasted just as good, and that was actually nourishing!
These coconut macaroon cookies are filled with fabulous, good fats. The medium chain fat in coconut oil will not add to your waistline, in fact, coconut oil and coconut meat have been found to reduce fat around the abdomen and hip area! They will also fill you quickly, you won't feel like you need to eat the whole bowl. I often use little bites of something containing coconut to suppress my appetite and keep me going until the next meal.
The honey in this recipe is just as good for you, but you can make these macaroons without honey!
There is no better use for those extra, leftover egg whites!
This recipe is easy and quick, and if you have kids, they will most likely enjoy them too. ;-) This is a great way to incorporate good fats into their diets, without giving them a sugar rush.
Makes 30 macaroons.
You can freeze these and eat them later too, so make a big batch. ;-)
You can easily add 1 or two tbsp of raw cocoa powder and 1 extra egg white to the ingredients to turn them into chocolate coconut macaroons. Mix the cocoa into the desiccated coconut mix before folding into the egg whites.
You can also make chocolate dipped coconut macaroons, by dipping them in a sugar-free, 90% cocoa chocolate. Do this only after your macaroons have cooled down.
