Most of us love to have something sweet every now and then, but nearly all desserts are filled with empty calories, including artificial ingredients and refined sugar, making them bad for your health and/or your figure. But, what if you could have a dessert that tasted just as good, and that was actually nourishing!

These coconut macaroon cookies are filled with fabulous, good fats. The medium chain fat in coconut oil will not add to your waistline, in fact, coconut oil and coconut meat have been found to reduce fat around the abdomen and hip area! Read more about the thermogenic, fat burning ability of coconut.

They will also fill you quickly, you won't feel like you need to eat the whole bowl. I often use little bites of something containing coconut to suppress my appetite and keep me going until the next meal.

The honey in this recipe is just as good for you, but you can make these macaroons without honey!

There is no better use for those extra, leftover egg whites!

This recipe is easy and quick, and if you have kids, they will most likely enjoy them too. ;-) This is a great way to incorporate good fats into their diets, without giving them a sugar rush.

How to Make Coconut Macaroons
Recipe for Coconut Macaroons

Makes 30 macaroons.


  • 4 egg whites (make sure not to get any yolk in your mixing bowl)
  • ⅓ cup honey (optional - for those with a sweet tooth)
  • Pinch of Himalayan salt 
  • 2 tsp vanilla extract
  • 2 cups organic coconut flakes or desiccated coconut
  • 1 tbsp of organic coconut oil


  • Whisk the egg whites with the salt until stiff.
  • Mix your honey, vanilla, coconut oil and desiccated coconut into a bowl.
  • Fold the coconut mixture into the egg whites.
  • Cover the mix and allow to rest for 15 - 30 minutes in the refrigerator.
  • Preheat the oven to 180 degrees Celcius. (350 Fahrenheit)
  • Line a baking sheet with parchment paper. They get very sticky, so this is a must.
  • Scoop out into round measuring spoons or with an ice cream spoon to give them a nice round shape.
  • Bake for 8 - 12 minutes or until light brown.

You can freeze these and eat them later too, so make a big batch. ;-)

Healthy Coconut Macaroon Recipe variations

Chocolate macaroons

You can easily add 1 or two tbsp of raw cocoa powder and 1 extra egg white to the ingredients to turn them into chocolate coconut macaroons. Mix the cocoa into the desiccated coconut mix before folding into the egg whites. 

You can also make chocolate dipped coconut macaroons, by dipping them in a sugar-free, 90% cocoa chocolate. Do this only after your macaroons have cooled down.
