Homemade toasted coconut can never be compared with the bought stuff, they are worlds apart. Toasted coconut chips made at home are crispy and more flavorsome.

The rich, caramel, nutty flavor of toasted coconut is excellent with almost all desserts and many savory dishes too. The combination of roasted coconut, banana, and a tasty chicken curry are to die for!!

Toasted coconut is also great as an in-between snack; they are healthy and even good for weight loss.
You can roast your coconut in the oven or toast it in a pan on the stove, but I prefer to toast mine in a pan. The coconut is more evenly browned this way. You can use a variety of coconut cuts to roast/toast, namely: shredded, flaked or shaved.
When toasting/roasting coconut
Mix the salt, coconut milk and eggs together. Heat your coconut oil in the pan on medium heat. Dip the bread in the egg mix. Cook each side until golden brown.
Serve with honey and a blob of cream cheese. ;-) Or any other topping that tickles your fancy.
